- 3 eggs
- ½ kg. ground almonds
- ½ kg. sugar
- 1 tablespoon of flour
- 1 kg. sweet potato
- 750 gr. sugar
- Zest of one lemon
- Powdered cinnamon
Melt the sugar with the three eggs, add the almonds, the flour and knead well.
Boil the sweet potatoes covered with water and skin on, once boiled, peel, mash and put them with the sugar in a casserole over low heat. When it starts to boil, stir until the sugar is melted and the sugar is candied, once candied, remove from the heat and add the grated lemon rind and the cinnamon powder.
When the filling is cold, the pastissi can be made.
The pastisos are then rolled into balls, flattened and filled with the filling in the shape of a moon.
Put them in the oven which has been previously heated to 180º until golden brown.
